Easy Paleo Dessert: Chocolate and Coconut Paleo Popsicles
I love an ice pop on a warm summer day. Since I don’t really do sugar or dairy, homemade (paleo) popsicles are always a favorite. They’re clean, healthy, and delicious. I’m so excited to share these recipes from Josie Rees with you. Josie adapted two paleo recipes and as you can see, her food styling and photography are on point. Chocolate and Coconut Paleo Popsicles
Easy Paleo Dessert Recipe:
Chocolate Popsicle Ingredients
Raw cashews (1 cup)
Maple syrup (1 tbsp)
Water (1 1/2 cups)
Coconut oil, melted (2 tbsp)
Cacao powder (6 tbsp)
Vanilla extract (1 tsp)
For the Drizzle
Cacao powder (1/3 cup)
Coconut oil (1 tbsp)
Maple syrup (1 tbsp)
Directions
Soak cashews in an airtight container and place in the fridge for at least 4 hours or overnight.
Drain cashews and put in a blender with maple syrup, water, coconut oil, cacao powder and vanilla extract.
Blend until smooth and place in popsicle molds. Freeze.
Mix all ingredients in a bowl. Place melted chocolate in a pastry bag with a small tip. Drizzle over frozen popsicles.

Coconut Paleo Popsicle Ingredients
Organic coconut milk (1 can)
Maple syrup (1 1/2 tbsp)
Vanilla extract (1 tbsp)
Shredded organic coconut (1 tbsp and extra for garnish)
Directions:
Combine all ingredients in a large bowl or blender in a blender to thicken.
Pour into popsicle molds. Freeze.
