Chocolate and Coconut Paleo Popsicles

It’s already Friday! I don’t know about you, but I have a thing for popsicles and usually crave my favorite frozen treat on warm summer days. Since I don’t really do sugar or dairy, homemade (paleo) popsicles are the way to go, and I’m so excited to share these recipes from Josie Rees with you.

Josie adapted two paleo recipes and as you can see, her food styling and photography are on point. Beautiful work aside, they really do look delicious, don’t they? I can’t wait to make them this week!

Chocolate Popsicles

Popsicle ingredients
1 cup raw cashews
1 tbsp maple syrup
1 1/2 cups of water
2 tbsp coconut oil, melted
6 tbsp cacao powder
1 tsp vanilla extract

Drizzle ingredients
1/3 cup of cacao powder
1 tbsp coconut oil
1 tbsp maple syrup

Directions:
Soak cashews in an airtight container and place in the fridge for at least 4 hours or overnight.
Drain cashews and put in a blender with maple syrup, water, coconut oil, cacao powder and vanilla extract.
Blend until smooth and place in popsicle molds. Freeze.

Mix all ingredients in a bowl. Place melted chocolate in a pastry bag with a small tip. Drizzle over frozen popsicles.

Coconut Popsicles

Ingredients
1 can of organic coconut milk
1 1/2 tbsp of maple syrup
1 tbsp of vanilla extract
1 tbsp. shredded organic coconut (extra for garnish)

Directions:
Combine all ingredients in a large bowl or blender in a blender to thicken.
Pour into popsicle molds. Freeze.
